Tex-Mex Cheesy Beef and Bean Skillet
On days when I just don't have the time for a big dinner production, this is the dish I go back to. It's perfect after a day of hiking, or a quick meal after Lorelai's dance class. Tex-Mex Cheesy Beef and Bean Skillet recipe requires only a few ingredients you probably have in your kitchen, and is on the table in about 30 minutes!
I first made this recipe about a year and a half ago. It was planned for three people, but I ended up feeding three of my kids, plus a son-in-law, and the grandkids. It was a hit! They all asked for seconds!. I regretted not making twice the amount. Since then, it's been requested countless times.

That brings me to another benefit - meal prep! Packing up leftovers into bento boxes is my thing. If I can make a lunch out of dinner, I'm all for it. How to make Tex-Mex Cheesy Beef and Bean Skillet
This recipe is so simple, you'll find yourself making it on a regular basis. I mean, it's not a go-to recipe for no reason, right?1. In a large skillet, cook ground beef over medium heat until browned; drain and return to skillet.
2. Stir in taco seasoning, water, salsa, and beans.
3. Cook, stirring occasionally, 3-4 minutes or until slightly thickened. Remove from heat.
4. Stir in tortilla strips.
5. Sprinkle with cheese. Let stand 5 minutes or until cheese has melted.
6. Top each serving with sour cream.
Seriously, does it get any easier than that?

Tips and Equipment
- The recipe calls for 2 cups, each, of the beans. This would basically be two 15 oz cans (one of each bean), if you go that route. I can't do that because I taste metal in the food (yeah, that's a thing - a very annoying thing). I buy dry beans and use my Instant Pot to cook them. Once cooked, I freeze them, 2 cups per freezer bag. When I need them, I steam them for 3-5 minutes in the Instant Pot.This 9.5-inch Copper Chef pan, like the one in the photos, helps you cook this recipe pretty quickly, plus you can take it straight to the table!

- 1 lb ground beef
- 4 Tbsp taco seasoning
- 1 cup water
- 1 cup refrigerated salsa (restaurant style)
- 2 cups black beans, rinsed and drained
- 2 cups pinto beans, rinsed and drained
- 4 fajita-sized tortillas, cut in strips
- 1 cup Cheddar cheese, shredded
- 8 oz container of sour cream
instructions:
