This no-bake dessert is so simple, pretty much anyone can make it - even a beginner cook. And oh my goodness, it's so good! Not only is it delicious enough for a regular weeknight dessert, it's great for special occasions, too. 

Not only are the easy to make, they come together fast, and no cheesecake worries - no water bath, no soggy crust, none of that. These parfaits are everything you love about cheesecake, without having to make a cheesecake. I call that a win!

These parfaits take only 15 minutes from start to finish, making it the ultimate no-bake summer treat! Perfect for potlucks, cookouts, or just because you want a delicious, creamy treat.

INGREDIENTS

This decadent dessert is made with simple ingredients you probably already have on hand.

  • powdered sugar
  • vanilla extract
  • Lemon juice
  • heavy cream
  • fresh blueberries
  • water
  • cornstarch

How to Make Lemon Blueberry Cheesecake Parfaits


It really couldn't be easier or quicker to make these delectable treats.

  1. Prepare the crust: Crush the graham crackers, either by blitzing in your food processor, or place them in a zip bag and crush with a rolling pin. Pour them into a bowl, then add sugar and melted butter. Combine them well, then set aside.
  2. Make the blueberry compote: Making the compote is simple. It's made of blueberries, sugar, lemon juice, water, and cornstarch that you'll heat until boiling, then reduce to a simmer for 5 or 6 minutes. Set that aside and allow it to cool.
  3. Make the cream cheese filling: First, you'll beat the cream cheese until it's smooth. Then you'll add the Greek yogurt, powdered sugar, vanilla, lemon juice, zest, and heavy cream. Mix them until they're smooth and creamy.
  4. Layer the parfaits: layer graham crackers, cheesecake mixture, and blueberries compote. To make 4 parfaits, you'll do this twice in each glass.
  5. To serve: These can be eaten right away. You can also cover them and chill or an hour or overnight.

Make Ahead Tips


There are two ways to make these ahead of time. The first is to build the parfaits, cover them, and store overnight in the refrigerator. The other way is to make the crust and cream cheese filling ahead of time, and store them in separate airtight containers in the refrigerator. When you're ready to serve, make the blueberry filling, then build your parfaits.
