Chicken Salad Wonton Cups Recipe

These chicken salad wontons are a perfectly delicious appetizer, but they also make a great lunch, too. Seriously, instead of that chicken salad sandwich you were planning to eat, whip up a batch of these wontons to change things up!

Ingredients for Chicken Salad Wonton Cups

Chicken - I cook a couple of chicken breasts in the Instant Pot, then shred it. You could also use a rotisserie chicken.
Mayonnaise - Duke's Mayonnaise is my go-to, but use whatever yu have.
Mustard - regular yellow mustard
Dill pickle relish - I use dill relish, but you could easily use sweet relish if you have it.
Veggies - you'll need celery and green onions.
Wonton wrappers - look for these in the refrigerated area of your produce section.

How to Make Chicken Salad Wonton Cups

There are three easy steps in this process. It's quite easy to pull this together, and you can do it in minutes! Perfect if you have unexpected guests, or need to whip something up quickly for lunch!

  1. Prepare the wonton wrappers - Place the wrappers in a muffin tinthem in a 350° oven for 7 minutes or until golden brown.

  2. Make the chicken salad - Place the shredded chicken, mayonnaise, mustard, pickle relish, chopped celery, and sliced green onion in a large mixing bowl. Mix well. Add salt and pepper to taste, then mix again.

  3. Combine the two - Add the chicken salad mixture to the wonton cups, top with sliced green onion.

Make-Ahead Tips

- It's easy to make this ahead of time. You can store the chicken salad for 1-2 days. Stir well before filling the wonton cups.

- After baking the wonton cups, allow them to cool completely. Then store them in an airtight container to keep them crisp. Assemble just before serving.

- If you make this to serve immediately, use cold chicken. Chicken salad is best served cold. Make sure your wonton cups have cooled completely before filling.

- Only make as many wonton cups as you'll need. You can always store the chicken salad in the refrigerator for another couple of days (four days max from the date of preparation). If you store the filled wonton cups, however, they're likely to get soggy.

Chicken Salad Add-Ins

Maybe you're looking for a different flavor or texture. Here are some common add-ins you may want to try.

  • Fruit – It's common to add sliced grapes to chicken salad. Other ideas: avocado, diced apples, or dried cranberries.
  • Nuts – Pecans, almonds, cashews, and walnuts are all great additions to chicken salad. (Pecans and cranberries take chicken salad to the next level!)
  • Veggies - Chopped celery, carrots, or bell peppers are great for flavor and crunch.
  • Seasonings – Add onion powder, garlic powder, or seasoned salt for some extra flavor.
  • Herbs – Some chopped fresh parsley or fresh dill would be a great addition.
  • Hard-boiled eggs - Grate a hard-boiled egg, the same as you would for egg salad, and mix into this chicken salad.
